Ingredients:
- 1 lb ground beef or turkey
- 1 small onion, chopped
- 1 packet taco seasoning
- 1 can (10 oz) enchilada sauce
- 1 cup salsa
- 6 flour or corn tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 1 cup refried beans (optional)
- 1/2 cup sour cream (plus extra for serving)
Instructions:
- Preheat the Oven:
Preheat oven to 375°F (190°C). Lightly grease a round or square baking dish. - Cook the Beef Mixture:
In a skillet, cook the ground beef and onion over medium heat until browned.
Stir in the taco seasoning, enchilada sauce, and salsa.
Simmer for 5 minutes. - Layer the Casserole:
Place one tortilla on the bottom of the baking dish.
Spread some of the beef mixture over it.
Add a spoonful of refried beans if using.
Sprinkle with cheese.
Continue layering until all ingredients are used, finishing with a layer of cheese on top. - Bake:
Bake uncovered for 25–30 minutes, or until the casserole is bubbly and the cheese is melted and golden. - Serve:
Let the casserole rest for 5 minutes.
Top with sour cream and serve warm.
