Sweet Mexican Pancakes (Gorditas de Azúcar)

Ingredients:

  • 2 cups flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup sugar
  • 1 egg
  • ¾ cup milk
  • 2 tbsp melted butter
  • 1 tsp vanilla

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Add the egg, milk, melted butter, and vanilla. Mix until a soft dough forms.
  3. Knead gently for 1–2 minutes until smooth.
  4. Roll the dough out on a lightly floured surface to about ¼-inch thickness.
  5. Cut into circles using a biscuit cutter or the rim of a glass.
  6. Heat a skillet over medium heat.
  7. Cook each gordita for 2–3 minutes per side, or until golden and cooked through.
  8. Serve warm, plain or dusted with sugar.
