Snowball Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 5 tablespoons granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon fine-grain sea salt
  • 2 cups all-purpose flour
  • 2 cups finely chopped walnuts, almonds, or pecans
  • 1 1/2 cups confectioners’ sugar (for coating)

Directions:

  1. Preheat oven to 325°F (165°C).
  2. In a large bowl, blend softened butter with granulated sugar until creamy. Add vanilla extract and mix well.
  3. Stir in salt, flour, and chopped nuts until the dough comes together.
  4. Shape dough into 1-inch balls (or slightly flatten for cookie-style rounds) and place on an ungreased baking sheet about 1 inch apart.
  5. Bake for about 20 minutes, or until the bottoms are lightly golden.
  6. While cookies are still warm, gently roll them in confectioners’ sugar.
  7. Allow cookies to cool completely, then roll again in confectioners’ sugar for a snowy finish.

Tip: Store in an airtight container at room temperature—they stay delicious for up to a week. Perfect for holiday cookie trays or gifting!
