Ingredients:
- 2 pounds lean ground beef
- 1 small onion, finely diced
- 1/2 cup finely diced bell pepper (optional)
- 1 1/2 sleeves Ritz crackers (about 48 crackers), crushed
- 2 eggs, lightly beaten
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
For the Topping:
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 teaspoon yellow mustard
Instructions:
- Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine ground beef, diced onion, bell pepper (if using), crushed Ritz crackers, eggs, milk, salt, pepper, garlic powder, and onion powder. Mix until just combined—do not overmix.
- Shape the mixture into a loaf and place it in the prepared pan.
- In a small bowl, stir together ketchup, brown sugar, and mustard. Spread half of the mixture over the top of the meatloaf.
- Bake for 45 minutes, then spread the remaining glaze on top. Continue baking for another 15–20 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
- Let rest for 10 minutes before slicing.
