BBQ Ribs

Ingredients:

  • 2 racks beef ribs (about 4 lbs total)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1 cup tomato ketchup
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard powder

Directions:

  1. Preheat the oven to 300°F (150°C). Line a baking tray with aluminum foil and place a wire rack on top.
  2. Pat the ribs dry with paper towels and rub them evenly with olive oil.
  3. In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, chili powder, and cayenne pepper.
  4. Rub the spice mixture all over the ribs, ensuring they are fully coated.
  5. Place the ribs on the prepared rack, cover tightly with foil, and bake for 2 ½ to 3 hours, until tender.
  6. While the ribs are baking, prepare the BBQ sauce: combine ketchup, honey, apple cider vinegar, soy sauce, brown sugar, and mustard powder in a saucepan.
  7. Simmer over low heat for 10–15 minutes, stirring occasionally, until the sauce thickens slightly.
  8. Once the ribs are tender, remove from the oven and increase the temperature to 400°F (200°C).
  9. Brush the ribs generously with the BBQ sauce and return to the oven, uncovered, for 10–15 minutes to caramelize.
  10. Slice between the bones and serve hot, with extra sauce on the side.
