Ingredients:
- 2 racks beef ribs (about 4 lbs total)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper (optional for heat)
- 1 cup tomato ketchup
- 1/2 cup honey
- 1/4 cup apple cider vinegar
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon mustard powder
Directions:
- Preheat the oven to 300°F (150°C). Line a baking tray with aluminum foil and place a wire rack on top.
- Pat the ribs dry with paper towels and rub them evenly with olive oil.
- In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, chili powder, and cayenne pepper.
- Rub the spice mixture all over the ribs, ensuring they are fully coated.
- Place the ribs on the prepared rack, cover tightly with foil, and bake for 2 ½ to 3 hours, until tender.
- While the ribs are baking, prepare the BBQ sauce: combine ketchup, honey, apple cider vinegar, soy sauce, brown sugar, and mustard powder in a saucepan.
- Simmer over low heat for 10–15 minutes, stirring occasionally, until the sauce thickens slightly.
- Once the ribs are tender, remove from the oven and increase the temperature to 400°F (200°C).
- Brush the ribs generously with the BBQ sauce and return to the oven, uncovered, for 10–15 minutes to caramelize.
- Slice between the bones and serve hot, with extra sauce on the side.
