Thanksgiving Turkey Cupcakes

Ingredients:
1 1/2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 cup vegetable oil
1 cup buttermilk
1 teaspoon vanilla extract
1/2 cup hot water or hot coffee (for extra flavor)

For Decorating (Turkey Toppers):
Chocolate frosting
Candy corn (for feathers)
Candy eyes
Mini peanut butter cups or chocolate drops (for faces)
Orange or red icing (for beak and wattle)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. Add eggs, oil, buttermilk, and vanilla. Mix until smooth.
  4. Gradually stir in hot water or coffee until the batter is thin and well combined.
  5. Fill cupcake liners two-thirds full and bake for 18–20 minutes, or until a toothpick inserted comes out clean.
  6. Let cupcakes cool completely before decorating.
  7. Spread chocolate frosting over each cupcake.
  8. Arrange candy corn around the top edge for “feathers.”
  9. Use a mini peanut butter cup for the turkey’s face and add candy eyes, an orange icing beak, and a small red wattle.
