Crock Pot Crack Potato Soup

Ingredients

  • 6 cups diced potatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 8 oz cream cheese, softened
  • 6 slices cooked bacon, crumbled
  • 1½ tsp paprika
  • ½ tsp black pepper
  • Salt, to taste
  • Optional garnish: extra cheese, bacon, and green onions

Instructions

  1. Add ingredients to crock pot:
    Place potatoes, onion, garlic, broth, paprika, salt, and pepper into your slow cooker. Stir to combine.
  2. Cook:
    Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  3. Blend slightly:
    Use a potato masher or immersion blender to thicken the soup to your desired texture.
  4. Add cream and cheeses:
    Stir in heavy cream, cream cheese, and shredded cheddar. Cook for another 20–30 minutes until smooth and creamy.
  5. Add bacon:
    Stir in most of the crumbled bacon, saving a little for topping.
  6. Serve:
    Ladle into bowls and top with extra cheese, bacon, and green onions if desired.
