Ingredients:
- 4 Italian sausages (mild or spicy)
- 2 bell peppers, sliced (any color)
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish (optional)
- Crusty bread or hoagie rolls, for serving (optional)
Instructions:
1. Cook the Sausages
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausages and cook until browned on all sides, about 7–8 minutes. Remove from the pan and set aside.
2. Sauté the Vegetables
In the same skillet, add the remaining olive oil. Add the sliced bell peppers and onion. Season with garlic powder, oregano, salt, and pepper.
Cook for 8–10 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
3. Combine and Simmer
Return the sausages to the skillet with the peppers and onions. Reduce the heat to low, cover, and simmer for about 10 minutes to allow the flavors to blend.
4. Serve
Serve the sausages and vegetables as-is, or tuck them into crusty rolls for hearty sandwiches. Garnish with fresh basil or parsley if desired.
Tip: For extra flavor, splash a bit of balsamic vinegar or marinara sauce into the pan before simmering.
