Ingredients:
- 1 pound Italian sausage, casing removed
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups chopped spinach (fresh or frozen)
- 1 cup grated Parmesan cheese
- 2 cups diced potatoes (optional)
- Salt and pepper to taste
- ½ teaspoon Italian seasoning
Instructions:
- Cook the Sausage:
In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks. Remove excess grease if necessary. - Add Aromatics:
Stir in the chopped onion and minced garlic. Cook for 2–3 minutes until fragrant and softened. - Add Broth and Potatoes:
Pour in the chicken broth and add diced potatoes (if using). Bring to a boil, then reduce heat and simmer for about 10–15 minutes until the potatoes are tender. - Add Cream and Spinach:
Stir in the heavy cream, spinach, Parmesan cheese, and Italian seasoning. Simmer for another 5 minutes, stirring occasionally. - Season and Serve:
Taste and adjust with salt and pepper. Serve warm with crusty bread or garlic toast.
