Sausage, Rich Gravy, and Biscuit Pie

Ingredients :

Gravy Filling:

  • 1 lb premium pork sausage
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 1 tsp salt
  • ½ tsp black pepper
  • (Optional: garlic/onion powder)

Biscuit Topping:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold cubed butter
  • ¾ cup cold buttermilk

Instructions : 

Preheat oven to 375°F. Grease deep pie dish.

Make Gravy:

    • Brown sausage in cast iron skillet (reserve fat).

    • Sprinkle flour, cook 1 min.

    • Gradually whisk in milk until thickened (5-7 mins). Season.

Make Biscuits:

    • Whisk flour, baking powder, salt.

    • Cut in cold butter with pastry cutter until crumbly.

    • Stir in buttermilk until just combined.

Assemble:

Pour gravy into dish.

Pat dough to ¾” thick, cut shapes, layer over gravy.

Bake 25-30 mins until golden. Brush with butter.

Garnish with fresh parsley.
