  • 1 lb pork sausage (mild or spicy, your choice)
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon onion powder (optional)
  • For the Biscuit Topping:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into cubes
  • ¾ cup cold milk or buttermilk
  • Optional Toppings:
  • Extra melted butter for brushing
  • Chopped parsley for garnish

Instructions : 

  1. Preheat the oven:
  2. Set your oven to 375°F (190°C). Grease a deep pie dish or 9×9-inch baking dish.
  3. Make the sausage gravy:
  4. In a large skillet over medium heat, cook the sausage until browned and crumbled. Do not drain all the fat — you need some for the roux.
  5. Sprinkle the flour over the sausage and stir well to coat. Cook for 1–2 minutes to remove the raw flour taste.
  6. Gradually add in the milk while stirring constantly to avoid lumps. Cook and stir until the gravy thickens, about 5–7 minutes. Season with salt, pepper, garlic powder, and onion powder. Remove from heat.
  7. Make the biscuit dough:
  8. In a large bowl, whisk together the flour, baking powder, and salt.
  9. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  10. Add the milk and stir just until a soft dough forms. Do not overmix.
  11. Turn the dough onto a floured surface and gently pat into a ¾-inch thick layer. Cut into rounds or squares, depending on your dish shape.
  12. Assemble the pie:
  13. Pour the sausage gravy into the greased baking dish. Top with the biscuit pieces, spacing them slightly apart to allow room for rising.
  14. Bake:
  15. Bake for 25–30 minutes, or until the biscuits are golden brown and cooked through. If desired, brush the tops with melted butter right after baking.
  16. Serve hot:
  17. Scoop into generous portions and serve with a fried egg on top for an extra indulgent breakfast-for-dinner twist!
