Ingredients :
Gravy Filling:
- 1 lb premium pork sausage
- ¼ cup all-purpose flour
- 2 cups whole milk
- 1 tsp salt
- ½ tsp black pepper
- (Optional: garlic/onion powder)
Biscuit Topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup cold cubed butter
- ¾ cup cold buttermilk
Instructions :
Preheat oven to 375°F. Grease deep pie dish.
Make Gravy:

Brown sausage in cast iron skillet (reserve fat).

Sprinkle flour, cook 1 min.

Gradually whisk in milk until thickened (5-7 mins). Season.

Make Biscuits:

Whisk flour, baking powder, salt.

Cut in cold butter with pastry cutter until crumbly.

Stir in buttermilk until just combined.

Assemble:
Pour gravy into dish.
Pat dough to ¾” thick, cut shapes, layer over gravy.
Bake 25-30 mins until golden. Brush with butter.
Garnish with fresh parsley.
