Ingredients :
- 1 box yellow cake mix (or white cake mix)
- 1 cup unsalted butter, melted
- 2 1/2 cups rhubarb, chopped
Instructions :
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
- Prepare the base: In a large bowl, combine the yellow cake mix and melted butter. Stir until the mixture forms a crumbly dough. Press this dough evenly into the bottom of the prepared baking pan to form the crust.
- Add the rhubarb: Spread the chopped rhubarb evenly over the crust layer. You can lightly press the rhubarb into the dough if needed.
- Bake the squares: Bake in the preheated oven for 40-45 minutes, or until the rhubarb is tender and the crust is golden brown.
- Cool and serve: Let the rhubarb squares cool completely before slicing into squares. Serve at room temperature or chilled.
- Tips & Variations:
For a slightly sweeter touch, sprinkle the top of the rhubarb with a little sugar before baking. - You can use a flavored cake mix, like vanilla or butter, for a different flavor profile.
