Ingredients:
- ¾ cup lime juice
- ¼ cup packed mint leaves (plus extra for garnish)
- ½ cup sugar
- ½ cup white rum
- ½ cup coconut rum
- 1 cup canned coconut milk
- Sparkling water
- Pomegranate arils
Instructions:
- In a large pitcher, muddle the mint leaves with sugar and lime juice.
- (Optional) Strain out the mint leaves for a smoother drink.
- Fill four glasses halfway with ice.
- Add the rum–coconut milk mixture to each glass until ¾ full.
- Top with sparkling water.
- Garnish with fresh mint and pomegranate arils.
