Ingredients :
- 2 ½ pounds Russet potatoes, or any starchy potato, peeled and finely grated
- 1 yellow onion, finely grated
- 2 large eggs
- 1 tsp salt
- ¼ cup all-purpose flour
- Oil for frying
How To Make Classic Potato Pancakes :
- After grating the potatoes, use a towel to thoroughly wring out all the liquid.
- Place the drained potatoes into a large bowl with the grated onion, salt, eggs, and flour.
- Mix thoroughly with your hands until the mixture is somewhat tacky. If it’s too sticky, add a little more flour.
- Heat 3 tablespoons of oil in a skillet over medium heat.
- Place ⅓ to ½ cup of the mixture into the hot skillet.
- Fry for three to five minutes on each side until they are golden brown.
- Briefly drain on paper towels.
- Serve immediately while hot with applesauce, a sprinkle of powdered sugar, sour cream, or yogurt.
- These can also be served as a side dish with meat and gravy.
