Classic Potato Pancakes

Ingredients :

  • 2 ½ pounds Russet potatoes, or any starchy potato, peeled and finely grated
  • 1 yellow onion, finely grated
  • 2 large eggs
  • 1 tsp salt
  • ¼ cup all-purpose flour
  • Oil for frying

How To Make Classic Potato Pancakes :

  1. After grating the potatoes, use a towel to thoroughly wring out all the liquid.
  2. Place the drained potatoes into a large bowl with the grated onion, salt, eggs, and flour.
  3. Mix thoroughly with your hands until the mixture is somewhat tacky. If it’s too sticky, add a little more flour.
  4. Heat 3 tablespoons of oil in a skillet over medium heat.
  5. Place ⅓ to ½ cup of the mixture into the hot skillet.
  6. Fry for three to five minutes on each side until they are golden brown.
  7. Briefly drain on paper towels.
  8. Serve immediately while hot with applesauce, a sprinkle of powdered sugar, sour cream, or yogurt.
  9. These can also be served as a side dish with meat and gravy.
