Doughnuts recipe

Ingredients:

  • 375 g (3 cups) all-purpose flour
  • 2 tablespoons softened butter
  • 7 g dry yeast (or 20 g fresh yeast)
  • 5 tablespoons sugar (≈ 60 g)
  • 240 ml (1 cup) warm milk

Instructions:

  1. In a small bowl, dissolve the yeast and 1 tablespoon of sugar in the warm milk. Let it rest for 10 minutes until foamy.
  2. In a large mixing bowl, combine the flour, remaining sugar, and butter.
  3. Pour the yeast mixture into the flour and knead until you get a soft and slightly sticky dough (about 10 minutes by hand or 5 minutes with a stand mixer).
  4. Cover and let the dough rise for 1 to 1½ hours, until it doubles in size.
  5. Punch down the dough, roll it out on a floured surface to about 1 cm thickness, then cut circles using a cookie cutter or a glass.
  6. Place the doughnuts on a floured tray, cover with a cloth, and let rise for another 30 minutes.
  7. Heat oil to 170°C (340°F) and fry the doughnuts for 1–2 minutes on each side until golden brown.
  8. Drain on paper towels, then roll in sugar or let cool before glazing.

Resting time: 1 hour 30 minutes
Cooking time: 15 minutes
Servings: about 12 doughnuts
